I poach. Throw chicken in the pot, add chicken stock to cover. Bring to gentle boil, immediately turn down low to simmer for 10 minutes, then turn off heat and cover for another 10 minutes.
IVoila. Tender and juicy - not the same as boiling
Agree. I once boiled some chicken breasts to the point of disintegration for a chicken salad I was making for a brunch I was hosting. It was n-a-s-t-y. I learned my lesson!

Oh, I know. I'm specifically turned off by boiled chicken. It makes me gag; but I'm definitely strange about meat.
