I know that as soon as sperm and egg meet you start producing HCG, but seeing how I tested 3 days before my missed period and had a positive HPT what are the possibilities of why it happened? I am just a bit on the nervous side that the little one wont stick, or has it already? What are your opinions ladies...

This. The production of HCG begins only when the fertilized egg has implanted in the uterus lining. Whether or not the embryo is viable, or if it will stick are anyone's guess, but there's a potential baby in there. Congrats!
Implantation (which produced a gigantic surge of hCG as the placenta begins to form) usually occurs 7-10 days past ovulation, but can occur as early as 5 DPO.
Unless you were carefully charting your BBT, you don't know if you ovulated a little earlier and when you likely implanted (hence the positive test).
You won't really know if you have a sticky baby until he or she is born (or at least until past the 1st tri).
