Babies do this sometime and it can be for different reasons. For my DD, I remember her crying like this when she was gassy. Try de-latching her and burping her, or putting her on her back on the bed and gently pushing her knees to her stomach to make her fart. Mylecon is awesome, too.
Just to add... to de-latch a baby without injuring your nipple, put your thumb where her bottom and top lip meet at the corner of her mouth and gently pushing to break the latch.
Mine did that at 7wks as well, it was severe gas pains. I have a VERY careful diet because she's a sensitive nurser, so I know it wasn't anything I ate. I think her digestive system was changing, and it just made everything hurt. She did MUCH better today, but still had her crying times so I think it's better now.
My DD started doing this a few days ago and when I looked it up on kellymom.com, the first thing it said was that it's common for 6-8week olds to fuss while nursing. I do try burping her and it sometimes helps, but I'm also just kinda waiting to see if it passes.

It could also have to do with the rate of your flow. Since she's 7 weeks, she could be getting more efficient and now want the milk to come faster than it does. If that's the case, it might just take a few days for her to get used to it.

Thanks everybody for all the replies
will definately try the knees to tummy trick and if it's not gas we'll just wait it out
We're not worried about slow letdown at all, it scares her sometimes when the "faucet turns on" so to speak and she gets squirted lol
