Give me some easy lunch ideas

I make a good breakfast and a great dinner but I don't believe in making amazing lunches. I see people going all out for lunch like you would for dinner and I think that's crazy and to expensive. I would like to get some easy lunch ideas..

  • I'm always looking for new lunch ideas too.  I feel like I'm always giving DD the same things!  Grilled cheese, yougurt, bagel with some sort of spread, toast, soup, mac & cheese, hot dog(with skin taken off), etc.....

    are you asking for easy kid lunches?

    I'm never that hungry for lunch. I could just have a granola bar. DD is usually the only one that eats lunch at our house. Breakfast and dinner is when DH is home.

  • I make pita pizzas that DD loves.  Also, turkey wraps, butter noodles, etc.

  • we do a lot of leftovers for lunch. on days when we don't have any, I give DS a grilled cheese sandwich, Ian's Chicken Nuggets, or something like that, with steamed veggies and fruit.

    Note: we send DS to daycare so all of this is prepared the night before. On the weekends it's similar or else we eat out while we're running errands and stuff.

  • It's hard to cook for just me and H for dinner so I usually end up with a ton of leftovers that I just bring in for lunch.  Otherwise, if I slack or we actually manage to eat all the dinner from the night before, I just make a salad or a boring sandwich.  I spice it up with avocados, hummus or nuts.
  • A few of our common "easy lunches":

    cheese & black bean quesadilla (Cheese + black beans or black bean refried beans + 1 tortilla folded in half. (I microwave when time is tight and use the george foreman to toast when I have time) -- serve with sour cream, if desired.

    Hardboiled egg (cut up, of course) or little pieces or chicken or lunch meat with cheese crumbles and small veggies (lima beans, corn, peas, carrots, kidney beans).  Sometimes we add brown rice or a piece of a bagel or toast to this meal.

    Peanut butter and jelly on a tortilla with yogurt and veggies (above).

  • Today we did cheese bits and bread with hummus.

    We also like, eggs (scrambled or hard boiled) and peas.

    Waffle with jelly. 

    Turkey hotdogs (cut super small) and cheese bits. 

    I also give him homemade soup I've frozen in small batches.

  • Anna usually gets a grilled cheese sandwich with sliced bananas (sliced super small) :) She LOVES yogurt so she gets that along with her lunch as well :)
  • Gigi likes a lot of things.

    Pita bread with humms (She likes to dip now)

    Pita pizza (like a PP) super quick and easy

     I keep a package of pitas in the freezer and just toast  or microwave as needed.

    Frozen peas cook up quickly

    cheese quesedilla with tofu

    Tofu bites with a veggie and fruit

    apples with almond butter yogurt dip

  • I heat Minute Rice cups and single serving frozen veggies.  It's quick, pretty healthy and yummy.  Sometimes I do a Lean Cuisine or leftovers.
