I'm looking for one online, but it scares me to try one out for the first time when I'm cooking for others. I could easily embarrass myself. I'm signed up to take breakfast for my mom's Bible study and they usually like something hot along with cold stuff too. They go all out. Anyways, does anyone have a really good breakfast casserole recipe that does not include ham or bread? Anything else is fine.

i love this hashbrown casserole. it's basically hashbrowns and cheese but it is SO good!!! it also makes a great side dish for dinner, so it's not just limited to breakfast!

Here's another hashbrown casserole...
ACC Potato Casserole2 lbs frozen hashbrowns (thawed)
1 stick butter
1 pt. sour cream
1 can cream of chicken soup
1/2 cup finely chopped onion
2 cups shredded extra sharp cheddar cheese
1 tsp salt
1/2 tsp pepper
Combine these ingredients and put in a greased 2.5 to 3 qt. casserole dish.
Then combine 1 cup crushed cornflakes (or enough to cover the top) and 1/4 to 1/2 of a stick of butter melted. Toss the corn flake crumbs in melted butter and sprinkle on top.
Bake at 350 degrees for 40-45 minutes - should be golden brown on top.
Serves 16-20. Great for brunch or as a side dish for dinners.
