My 3yr old will be home with me during my maternity leave so I am needing lunch ideas for the 2 of us, besides the frozen, processed chicken nuggets, hot dogs, etc. I will be needing to eat too so I would like to make things both of us can eat but he doesn't eat a whole lot so it needs to be something I can make a single serving of instead of a big meal. Any ideas please and thank you!

Quesidillas- nice and easy. Flour tortillas on the stove with cheese and whatever else you want in there. Cut it up for the both of you.
I do a lot of dinner left over meat. Like chicken and ground beef. Add noodles/pasta and a veggie. Easy for both.

personal pizzas- I buy english muffins, toast them, add sauce and cheese and pop them in the toaster oven.
* home-made mac n cheese (one my picky nephews/patients ate in my blog and I am editing my family favorite to post if you need a starting point)
* pastas like bakes ziti, lasagna,stuffed shells, etc
* soups (you can use fun shape pasta to make it more kid friendly)
* homemade nuggets or chicken strips
* enchilidas
*stuffed pepper filling
* chili
z hamburgers/turkey burgers
* pancakes
We do some of the things already mentioned but at the risk of being repetitive:
homemade chicken nuggets - slice a chicken breast, dip in beaten egg, dip in bread crumbs/salt/pepper/sometimes a little grated parmesan cheese, bake in the oven for 15 min (time will vary depending on how think you cut your meat) at 400, turn over halfway through.
favorite pasta shape with basil pesto, simple marinara, cheese sauce
quesadillas - ham/cheese/spinach, mushrooms/carrots/red peppers/mozzarella, chicken breast/yellow peppers/tomatoes, pesto/mozzarella/tomatoes
english muffin pizzas - great way to sneak some veggies in
pita pocket sandwiches
Greek pasta salad - tomatoes, cucumbers, olives, feta cheese
pastry triangles - I buy frozen pastry, defrost, put whatever filling is in the house (similar things to what is in quesadillas), shape into triangles the size that DD can hold, bake
veggies sticks and dipping sauces (all homemade) - honey mustard, BBQ sauce, ranch dressing, yogurt, etc.

All the above is great.
We also do mini pizzas on english muffins or pitas. Pick your crust, then top with tomato paste and an italian season mix, add cheese and pepperoni (or whatever toppings you like). Bake in oven 350 for 15ish min.
We do roll ups or wraps. Like a sandwich but in a tortilla.
I will just do cracker and cheese tray with fruits and veggies as well.
Leftovers from dinner are also a favorite at our house.
