Does anyone have any good fool-proof muffin recipes? I am not really particular to any kind, as I have a bunch of ingredients hanging out around the house. (Just went grocery shopping yesterday). I love to bake, so simplicity is not the issue. I just do not have a personal favorite recipe that I know tastes great! I would hate to find a "promising recipe" online, for it to be a dud.

My fool proof muffin recipe is this:
1 box of spice cake mix
1 can of pumpkin (the soup can size)
Mix those two things together. none of the other things for the cake mix. I often add dried cranberries and/or nuts. Then I make mini muffins usually. Or you can even just drop globs on a cookie sheet like cookies.

The pumpkin cream cheese ones from the blog look amazing!
They remind me of my Starbucks job days. But those have roughly 700 calories per muffin! So worth it though.
