***Lelekay***RE: Lisa's Banana Cake as Cupcakes

Hey! I want to do these for Libby's party on Saturday...did you slow cook them the way Lisa described in her blog? Just want to know. I am going to make them on Friday afternoon.

TIA!

  • I did.  I made the recipe exactly as it was written, the only thing that was different is that I only ended up baking them for about 50 minutes, as opposed to 60.  The smaller cups reduced the baking time slightly, though I'd still stick a toothpick or knife in to be sure.

It was actually nice to put them in the freezer right away (though I did have to clean out some room in the freezer first!), since then they were cool right after and I was able to frost them right away.   I've got to say....they were absolutely delicious, and I keep thinking about making them again (if only I wouldn't eat them all myself)!

  • Oh, and P.S.....thanks for the rec for Picture People!  We went there this past Sunday for Henry's 6-month photos (which isn't until Saturday, but they had an awesome deal that was ending yesterday).  We were very pleased, and it was much, much cheaper than going to a photographer.  I'll post more pics later, but overall we were happy with our experience, and wouldn't have thought to go there if it weren't for Libby's adorable Christmas photos!

Hooray! I saw your pics on FB and honestly thought they were a private photog not Picture People! Too funny! Did you use the coupon? I will say...their staff seems trained to engage and get good photos of babies in a short amount of time...I think that's one issue with going to a regular photog...it takes a LONG time...and then the littles get cranky (at least in my experience).  We'll probably be doing PP more often now that my Baby Bundle is up with our photog. I'll keep her in mind for when we want to do outdoor shots/sessions but for in-studio with a white or gray background, PP all the way!

  • Leah-Just requested you as a friend on FB so I can see your cute pics!
  • We were going to use the coupon, but then found out that they were selling their CDs (with 20 high-res images including copyright) for $75!!  I think their usual price of $150 is a pretty darn good deal as it is, since most photogs charge a small fortune for this, but at 50% off we couldn't resist.  We have a large family and need lots of 8x10s and 5x7s for people, so having the CD to make our own prints at Walgreen's or wherever is not a bad idea for us.

Thanks! How many cupcakes did the recipe yield? I want to make 2 dozen.

I saw that promo too and was SO tempted to do it as well. If we didn't have Libby's last photoshoot with our photog coming up I would have...but as it is we'll be out $215 to get 10 images on CD from her and J always balks at that (depsite it still being fairly reasonable as pro photogs go)...but I hope PP runs that promo again, because it is quite the deal!

It made precisely 2 dozen (how perfect!)

Oooooh this is good to know! I still haven't made them as cupcakes myself and have been wondering about the baking time. Big Smile

Hooray! I've got my ingredients and cannot wait til bake 'em on Friday evening for Saturday's party. I am going to try to make the cream cheese frosting using banana yogurt (YoBaby) and hope that works. It has a little sugar in it, but not as much as 4 cups of powedered sugar. We shall see...if it doesn't work then I'll just make regular cream cheese frosting.
