What's for dinner?

I could ask this question nightly. I love talking about food and hearing what everyone is making! I'm trying something new tonight. I am stuffing chicken breasts with homemade pesto and goat cheese. Baking them with sliced tomatoes and a drizzle of olive oil on top. Roasted green beans with garlic on the side. We'll see how it goes...! :)

    March 2016 - Diagnosed with male factor, motility issues
    May 31, 2016 - Started IVF cycle
    June 15, 2016 - Egg retrieval, 27 eggs

    September-Bravelle injects with IUI #4-BFP!! MC 10/7/12 : ( Sonohysterogram-Normal
    December- Bravelle(3 good follicles & E2 1252) with IUI#5 BFFN :*(

  • Shredded BBQ chicken (been sitting in the crockpot all day) on wheat buns, sweet potato and garlic green beans.  Reading these posts always makes my appetite shoot through the roof... now I really can't wait to get off of work!

    Yum! I made something similar last week and DH loved it. Yours sounds even better.

    Pork medallions with red wine and onion reduction, wilted spinach with coarse mustard and a pear.

  • I made a turkey breast tonight. (was supposed to be last nights dinner until we lost water.) The made a gravy with the juices. And some asparagus and jasmine rice! Yum!
  • I'm having something similar to you, CLeigh. It's a South Beach Deit recipe called chicken capri, only I changed it. It's basically open-faced stuffed chicken with part-skim ricotta and spinach. The original called for tomatoes, but neither of us like them, so I subbed the spinach. Then you top it all with mozzarella and I think we'll have it with brocolli since we had green beans last night.

    See now my DH would LOVE what you are making tonight!! He loves Pork medallions, especially with red wine, yum! I'm hoping DH doesn't catch onto the goat cheese in the stuffing....normally I can 'hide' things pretty well. ;) Hard when you have a pickier eater!!

  • Mmmm... that sounds yummy! Provided I can't convince the hubs to eat leftovers, it's pan fried pork chops with mushroom gravy, wild rice, and roasted asparagus with parmesan for us.

    Last night I made a wonderfully easy dish that would be great for brunch- essentially you slice 2 Golden Delicious apples, place in a 9x13, pour a simple cinnamon batter over them and let bake for 20 mins. The whole thing took approx. 30 mins. and the hubs raved. It tastes like french toast with apples.

  • It was supposed to be homemade quick chili....but the meat was in the fridge since friday (was going to make it then and bailed)...the meat smelled funny and I threw it in the can....so frozen pizza it was.  Boo for me.
