Can you freeze sliced cucumbers

or will that ruin them b/c they have so much water content?  I really need to get my kids eating healthier and things like cucumbers go bad quickly after cut and my kids do not eat a ton of them - I wish I was the person that could go to the grocery store more often but I dread it.

  • Good question!  My kids love cucumbers but we haven't tried freezing them yet since they eat the whole thing like it's a banana anyways and they don't last when we buy them since they eat them up.  I will try it out though.  We do frozen grapes all the time in the summer especially and they have a lot of water content (but they are also contained by the outside of the grape).  Anyways interested to hear if anyone has tried it.

  • Watery fruits and veggies cannot be successfully frozen. The freezing creates ice crystals, which puncture the cell walls. When the food thaws, the water leaks out, and it turns to disgusting moosh.

  • We were having problems with cucumbers going bad at our house and then I found trays of mini cucumers at our grocery store.  They are the best!  It's 5 cucumbers that are all small and seedless.  They last a little longer since you can just leave them in the fridge and don't have to cut them up until right before you use them...not like a huge one that sits in a baggie with half of it cut off ;)
