This isn't a dinner, but whenever we get together with extended family (usually Christmas) dh and I are known for our "Weenie Surprise".... Mini sausages wrapped in bacon and cooked in brown sugar. We're also known for our spinach and artichoke dip.
I don't know if I have a signature dish, but there are some things that I make frequently that people always like. Roasted deviled potatoes as a side dish, penne and sausage casserole, white chicken chili, and ceviche-style shrimp tacos are a few.
I am constantly experimenting with new recipes, and usually I send leftovers to my DH's work, so they have a lot of favorites some things that have stuck are: sweet potato casserole that I make every Thanksgiving and Christmas, red velvet cake with white chocolate cream cheese frosting, pumpkin cheesecake, stuffing with homemade sourdough croutons.

My chicken and noodles - it's my grandmother's recipe. One of the key ingredients is ketchup, which always makes people say "ew" until they try it. Then, they're constantly asking when I'm making it again.

Taco salad. For anything on DH's side of the family where I am to bring a dish, that is requested every.single.time and I rarely bring any back home with us.
Re: Poll: What is your 'signature dish'

DH's favorite is my braised oxtails over garlic mashed potatoes.
I am also a great baker. Cheesecakes, brownies, giant ginger cookies, etc.
