I need some help!! I am going to mix cream cheese with a packet of Hidden Valley Ranch for the cucumber sandwiches but can't find exact amounts and how much it will make on google. Is it one package of cream cheese and one packet of ranch. And how many sandwiches would that make?
I am also make a chicken salad cucumber sandwich and would like the chicken salad to be very simple. I am thinking of roasting then shredding boneless chicken breast and mixing with mayo and maybe adding some finely chopped celery. Do you usually just taste-test for the amount of the mayo or is there an exact amount?

I don't know about the cucumber sandwiches, but I can help with the chicken salad. My recipe is this:
cook chicken breasts as desired, shred or cut chicken, add chopped celery, and mayo. I don't have exact measurements, so just start with a little and add until the mayo holds it together without overpowering the flavor. Also, I will add seasonings such as celery seed, ground mustard, paprika, and italian seasonings to taste.
The last time I made the cucumber sandwiches, I used Italian dressing/dip mix and used maybe half of the pack on two 8oz pkgs of cream cheese. I mixed in a little bit at a time. I didn't want it to be too salty, so my suggestion would be season to taste.
I don't remember how many sandwiches it made, but it was a good amount. You just spread a thin layer on the bread.
Regarding the chicken salad, -I would just taste test for the amount of mayo. It should be creamy, but not overpowering. Good Luck
