I have recently gone dairy free. I am hosting Thanksgiving and would like to be able to eat more that just turkey. What are you using as a butter substitute in cooking and baking?
Mashed potatos: just mash with lots of margrine and not milk or use plain rice milk (soy milk will discolor potatoes). My sis is severly lactose so we just set a potato aside and mash w/o milk if we are having company and want everyone elses to have milk.
My sister found a soy-based butter substitute that worked in cooking. you may have to check out a whole foods-type store to find it, one with a good vegan section.

Soy milk will not discolor mashed potatoes in any way. I use soy creamer to get a creamier consistency. You could also use almond milk. Rice milk works but is a little more watery than the others. Just make sure you get an unflavored version. I typically buy unsweetened, unflavored soy milk and unflavored soy creamer.
For baking you can use oil or applesauce to sub in most recipes. You can also use soy cream cheese and sour cream, both are vegan, unless you are also avoiding soy.
