One 2lb bag of hash browns (just get the Ore Ida frozen)
2 cans cream of chx soup
1 tub sour cream (16 ounce size)
2 cups cheddar cheese shredded
1 onion (diced)
salt/pepper
Mix together and bake at 350 for about an hour. It's so easy, and it's always a hit. I always take it when I need to bring a side dish, and there is never any left.
I've made a variation of the above hash brown one many times. Or there's this one:
BILL KNAPP?S AU GRATIN POTATO
2 cups water
1 ? 2 lb. frozen shredded hash brown potatoes
1 cup milk
3/4 teaspoon salt
4 tablespoons butter
1-1/4 cups instant mashed potatoes
1/4 teaspoon pepper
8 oz grated sharp cheddar cheese
1/2 pint sour cream
grated American cheese (or just a few slices)
1/2 cup chopped onion
Place water, milk, butter, salt and pepper in medium saucepan.Bring to a boil, remove from heat and immediately stir in instant mashed potatoes.
Fold frozen hash browns into mashed potato mixture.Stir in sour cream, cheddar cheese and onion.
Pour mixture into 9x13 treated pan.Sprinkle top with American cheese.Bake 30-40 minutes.When golden brown, place 3? from broiler, heat for 2-3 minutes until top is crisp.
Mine is almost identical to Mollymay's but I cook it at a lower temp for longer. They are the best potatoes ever! Always get huge raves. It takes forever to cook, but you can make it at naptime and it's ready for dinner.

Lately, I've been adding cut up ham to make it more of a potato and ham casserole. My whole family inhales it!

That's my exact recipe! Soooo good. My mom always topped it with crushed potato chips. (I typically leave it off though. No need for the extra grease.
I add the potato chips. There is just something about that extra crunch.

This one! I was going to post mine, but it's super similar, maybe even the same. I top it with crushed corn flakes though. It's always a very popular dish, and super easy to make.
