What to do with leftover pot roast?

Hi ladies!  As we speak, I have a pot roast with potatoes and carrots cooking in the crockpot.  It's a 2# roast and I know there's no way we're going to eat it all tonight.  I'm thinking I'll probably have maybe 3/4# left in leftovers.  Any suggestions for using the meat for another meal?  I know we can always just use it as straight-out leftovers, but I feel like a lot of times we don't eat them because we don't feel like the same meal 2 nights in a row.  I'd hate for it to go bad and would like to have a plan to use it for another night.

Any ideas?

  • I shred the meat, and use the meat and broth to make beefy vegetable soup.  Add a large can of diced tomatoes, tomato juice, a bag of frozen mixed veggies, a medium fresh cubed potato, fresh sliced carrots, a few Tblsp of diced onion, and whatever else you want...

  • Shred it, throw on some BBQ sauce and serve on a kaiser bun.  I did this just yesterday and it was really good.  Easy peasy and DH loved it.
  • BBQ Beef sandwiches.  I can never have pot roast more than one day.  I always make sure I get buns at the store and my favorite BBQ sauce (Sweet Baby Rays) and shred it all up.  You can also use Au jus sauce and it's just as good.
  • I do french dip sandwiches with my roast sometimes.  Save some of the juice from the crockpot and you can have it for lunch or have it for dinner the next night.
  • Vegetable Beef soup is my favorite.

  • Beef and barley soup.

    Or shepherd's pie.

  • dice everything up with the gravy and add tomato soup or sauce and more veggies (corn & peas) and make it a beef stew.

    It also freezes, so if you don't feel like having beef stew tomorrow you could put it in the freezer for a night you don't feel like cooking.

  • shred it, mix it with some roasted garlic, a little lime juice and cumin, maybe a little BBQ sauce and eat it on a corn tortillia with sourcream, cheese, and avo! Yum!

  • I agree with BBQ and French Dip sandwiches.  We like our French Dips with sauteed green pepper, mushroom and provolone cheese.

  • I just made hash with leftover london broil meat.  I shred the meat in a food processer and then shred potatoes and mix them together and fry it in a large skillet.  You can add onions, salt, pepper etc if you want.  I eat mine with ketchup and I love it!

  • shred it really good or grind it up, put some mayo, relish.  Makes GREAT deli sandwichs!!  YUM
