Hi ladies! As we speak, I have a pot roast with potatoes and carrots cooking in the crockpot. It's a 2# roast and I know there's no way we're going to eat it all tonight. I'm thinking I'll probably have maybe 3/4# left in leftovers. Any suggestions for using the meat for another meal? I know we can always just use it as straight-out leftovers, but I feel like a lot of times we don't eat them because we don't feel like the same meal 2 nights in a row. I'd hate for it to go bad and would like to have a plan to use it for another night.
Any ideas?

Beef and barley soup.
Or shepherd's pie.
dice everything up with the gravy and add tomato soup or sauce and more veggies (corn & peas) and make it a beef stew.
It also freezes, so if you don't feel like having beef stew tomorrow you could put it in the freezer for a night you don't feel like cooking.

shred it really good or grind it up, put some mayo, relish. Makes GREAT deli sandwichs!! YUM
