What's all the vegetarian mamas been eating???

Ive been on a sandwich/ wrap kick myself... Veggie burgers, Tofurkey w/ provolone, avocado tomato and hummus, etc. Or scrambled eggs with veggies in a wrap... Mmmmmmm. Whats all the other vegetarian mamas munching on these days??? :D

    Ive been a vegetarian for about 5 years now. It stems back to my parents having a hunting camp in Mississippi- I saw all the deer come back, head gets boiled to make trophies etc. Just NOT my thing. While they saw food and a sport, I just saw an animal. When I actually decided to try vegetarianism, I did my research and feel its a much healthier way to eat. :) Many more factors go into my decision, thats just a very brief overview.

  • Mmmm...wraps sound awesome.  I have some homemade hummus that would go great in a wrap.  Gonna have to do that today!  :-)  We try to make a variety of different dinners with enough left over for lunches/snacks.  In the last week or 2 we've had vegetarian chili, root vegetables au gratin (potatoes, sweet taters, turnips, parsnips, and leeks all sliced thin, layered w/ cheese and fresh thyme then baked), mushroom/leek/potato soup, and butternut squash bisque.  Hubby and I both like to cook.  We've also done veggie burgers and veggie pizza in a pinch.  These days I am in love with food!  :-)

  • It's so hard to get enough protein, isn't it? I eat fish so that helps (but had to cut down because of mercury concerns) but I also eat a lot of tofu stir frys, scrambled eggs, cheese, yogurt, and rice and beans. I've also learned that some grains like quinoa are a complete protein, and whole grain wraps also have a lot of protein.

    If it weren't for my awesome and talented DH's cooking, though, I'd be eating rolls with butter and cereal with fruit every meal -- it's all I want when I'm nauseous. But we're making a really concentrated effort on the protein front.

    •  Just had some veggie tacos-delish! Also we've been eating a variety of stir frys with tofu....oooh and bean burritos are pretty much a staple every week.
    • My hubby and I are both vegetarian.  We've been eating a lot of bean burritos, spaghetti, PIZZA (it's all I want lately), veggie chili, squash, etc... I also make sure to get in lots of dairy and eggs to help with the protein because I can not eat soy so tofu is out.

      Im not having a hard time getting enough protein. I try to make quinoa to boost and to get a variety of grains. I also try to keep nutritional yeast on hand to sprinkle on things. At aroun 7g of protein per tbsp Im not stingy! ;) And I do LOVE the taste of it. Sometimes Ill make a "mac n cheese" with some butter, soymilk, and yeast. SOOOOO good and super high in protein. I do have a rice protein powder Ill drink on days I feel Im slacking in the protein department but most of the time I feel like I do good. :)

      If you add up EVERYTHING you eat and drink its pretty easy to get enough protein. Of course you do have to switch some thing out for others at times but its not difficult! :)

    • all natural peanut butter and jelly on 12 grain (eeewww I ate Jif peanut butter the other day...that stuff is not even peanutbutter LOL)

      steel cut oats with cinnamon

      whole brown rice with fresh tomatoes bell peppers and shredded parm

      baked squash or lentil soups

      yogurt

      egg white french toast

      soy milk

      soy and dried fruit hemp granola

      granny smith apples!!!! strawberries, 

      IMO it is not hard to get protein and fiber....just iron and certain minerals

        Now youve just made me want, nay, NEED veggie tacos! >.< It doesnt help that I have big taco shells sitting in my pantry taunting me. ;)

      • Okay, so I've been a vegetarian my whole life (31 years -- minus the year or so when I "rebelled").  My dh has been a vegetarian for 6 years (a year before we got together).  I eat whatever I want to eat:

        I had yogurt and cereal for breakfast today, french toast yesterday, a bagel and cream cheese the day before that, oatmeal the day before that.  It's kind of a mix.  I do eat eggs and potatoes from time to time. 

        For lunch I often have dinner leftovers, but I also enjoy soups and sandwiches.  I like cheese sandwiches best, but I also enjoy hummus, or peanut butter and banana or just mayo and banana (my mom is from South Carolina), or any type of grilled sandwich.  Or pizza.   

        I hate tomatoes, avocado, and sprouts!  Not a fan of fake meat or tofu either, although since dh and I have been together I do eat more tofu.

        For dinner dh usually cooks and he's pretty fantastic at it.  We eat a lot of Asian style stir frys and curries.  Indian food.  Pizza.  I made a yummy pot pie the other night.  We eat more Mexican food than we probably should -- burritos mostly.  Pierogies filled with potatoes and cheese and topped with onions and mushrooms.  Roasted veggies.  Friday night we went to In and Out Burger (for those of you in CA) and got grilled cheese sandwiches. 

        I honestly don't worry about my protein intake.  It's a lot easier to get enough than you think.  Beans and rice make a complete protein -- almost any Mexican or Indian food does this automatically.  Even pizza and cereal have protein (& calcium)!  French toast is coated in eggs so there is even protein there.  Same with bagels with butter, cream cheese, or hummus.

        Oh and I eat chocolate, ice cream, and any other yummy food that comes my way!

I take a can of chickpeas, drain them, and then throw them in a baggie with olive oil and some spice. Sometimes paprika and chili powder or curry powder or just sea salt and pepper.  Spread them on a baking sheet and bake for 20-25 minutes in a 400 degree oven.  Really yummy!

        Fake chicken (Quorn brand is my fav) with mashed potatoes & corn

        Pasta with soy meatballs or eggplant and marinara sauce

        Tofurkey, veganaise and cheese sandwiches

        english muffin with peanut butter

        Grilled tempeh with soy cheese sandwhiches

        Baked Potatoes

        veggie chicken rolled tacos with faux sour cream

        oh and warm chocolate chip cookies ;)
