Easy Dinner Ideas?

Anyone wanna help?  I know that next week is going to be hellish, with long hours at work.  Our main server has been down since Tuesday, which meant that no Invoicing or AP has been completed since Tuesday.  On top of this, it will be end of month wrap up.  Fun times!  lol.  Anyways....  I am trying to make a list of easy dinner ideas for H and I for the next week.  For when I go to the grocery store, I can just have everything lined up for which ever one of us has dinner making abilities that night.  Meaning, who ever gets home first is the lucky dinner making winner.  lol.  Any suggestions will be greatly appreciated.  TIA!

    -sloppy joes

    -tacos

    -Spaghetti

    -Crock pot meals

    -casseroles

    I have a few websites that I love...my favorite is allrecipes dot com and they have so many ideas.  You can also read the reviews for tips and alterations to recipe.

  • My favorite "in a hurry meal" is Spaghetti. I just fry up some hamburger  and put it in the sause (outta the jar) and then just put the noodles in. I toss in some garlic bread.... outta the box (in the frozen section) and that cooks for 10-12 minutes and PRESTO! 

    hope that helps.... with two kids, and i just quit my job about two weeks ago... i was working full time midnights... and the hubby, i have a few tricks up my sleeve.

    Tacos are easy too. but my kids don't like the tomatoes and stuff. But if you were to cut them up and put them in a zip lock bag, they would be ok for a fe days. i get the already shredded lettuce and cheese. I by the taco kit with the shells (hard and soft) and all i have to do is fry up the meat. you can use turkey meat as a substitute for hamubrger if you want. the kids like to make their own so that helps too. oh, you can't forget sour cream too.

  • I love my crock pot... I will throw a roast in in the morning, when I get home I just make potatoes, a veg and gravy. It is like Sunday dinner and it only takes 20mins of prep in the evening.

    DH loves breakfast for supper, he would eat it every night it I let him (eggs, bacon, toast, etc.)

    Stuff you can make ahead, like casseroles, then just put it in the oven when you get home. 

    There are a lot of "once a month cooking" blogs and sites that might also give you some ideas...

  • I keep bags of Bertoli on hand... when I know Im gonna be home late hubby just has to stick it in the pan and stir... and they are really good!
  • I've been doing the crock pot a lot this week.

    Chili

    Pot roast

    soup

    Stuff like that.

    When you do have time though, I'd suggest making large batches of red sauce (with or without meat) and freezing it in baggies.

    You can do a lasagna and freeze it per portion too and the heat it up when you want it.

  • Thank you everyone!  Normally I just stop and pick up stuff to make for dinner on my way home, and then make it when I get here.  I just know that this week, I am not going to have any interest in doing this.

  • A quick meal for us is wraps.  I buy a rotisserie chicken, salad, red pepper and cucumber the beginning of the week.  I pull the chicken apart, wash and cut the salad, pepper and cucumber and it's all just ready in the fridge.  Just throw some in a wrap with dressing, sliced almonds/croutons, whatever you like and it's a meal.

  • MY SPAGHETTI CASSEROLE!

    Just boil rotini noodles and warm some spaghetti sauce of your choice on the stove.

    In a separate glass dish, add some cream cheese (about half a large tub- you can use regular or the one with chives). Add hot sauce first to melt the cream cheese, mix as well as you can. The more cream cheese you add the better it'll taste. Then mix in the noodles and add in a few veggies of your choice. My family likes broccoli (already steamed from the fresh steamers bag) and mushrooms, and sometimes ground beef added. Put it all in the oven(400deg) for about 5-10 minutes. Voila, easy one dish dinner that everyone will love and you'll have leftovers for a future night.

  • I know I'm a little late in responding, but I wanted to share something I made this week that DH and I both loved! I took 3 frozen chicken breasts and thawed, cut in to bite size pieces and cooked them in a pan with some canola oil and salt and pepper until just barely done. Made up two packages of quick cooking broccoli cheese rice (there are several brands like Rice-a-Roni I chose one with no MSG) and added two chopped up broccoli crowns and a half block of a small package of Velveeta (at the beginning of the cooking process). When the rice is almost done add chicken and pour into a casserole dish and finish in the oven at 350 degrees for about 5-10 minutes (you can grate cheddar cheese on top and melt it too). It didn't even take 30 minutes to cook and was SOOOO good!

  • I love the crock pot. Making stew this week, it reheats nicely. Pot roast too.

     I make a lot of rice and chicken toss in a vegetable, tacos, hot dogs and tater tots, ravioli, breakfast, mac n cheese and hot dogs.
