side dish for a cookout

I know we've had posts like this before, but any suggestions on a side dish to take to a cookout?  Something that will transport well and won't have to be cooked there.  Thanks!

  • I'm a fan of cold pasta salads. I make an often-requested one with tortellini, asparagus, yellow bell pepper, and a lemon parmesan vinaigrette. I have no clue where my recipe is...

    You are so helpful.  :)  (Kidding!)  I think I have a tortellini pasta salad recipe around here too somewhere - good idea!

    Tortellini and Asparagus Salad

    Makes: 10 side-dish servings

     

    2 9-oz. packages refrigerated cheese-filled tortellini

    1 pound fresh asparagus spears (about 16) cut into 1-inch pieces

    1 large yellow sweet pepper, cut into ?-inch pieces

    1 to 1 ?  teaspoons finely shredded lemon peel

    1/3 cup lemon juice

    ? cup olive oil (or salad oil)

    1 Tablespoon Dijon mustard

    1 teaspoon sugar

    ? teaspoon salt

    1 clove garlic, minced

    ? cup finely shredded parmesan cheese

    ? cup sliced green onions (about 4)

    ? cup pine nets or chopped almonds, toasted (optional)

     

    1. In a 4-quart Dutch over cook tortellini according to package directions, adding asparagus and sweet pepper the last minute of cooking; drain. Rinse tortellini and vegetables with cold water; drain again.

     

    1. For dressing, in a screw-top jar combine lemon peel, lemon juice, oil, mustard, sugar, salt, and garlic. Cover and shake well.

     

    1. In a very large bowl place tortellini and vegetables. Add dressing; toss to coat. Cover and chill 2 to 8 hours (or overnight). Just before serving, stir in cheese, green onions, and nuts. Let stand 10 minutes before serving.
