Hit me with a good chicken marinade recipe.

I want one that really infuses the chicken.  I used to get this citrus marinated chicken breast at a now-closed restaurant and I can never duplicate it at home.

  • If you want citrus chicken - just use orange juice/lemon juice - then use the orange/lemon zest from the rind.  Zest is the most flavorful part of the fruit.  I would let it marinate a good 4-6 hours before cooking.  Bake or grill and coat with honey at the very end for a sweet finish.  Yummy!

    Lately, I use cheap white wine (like 2-buck Chuck), olive oil and a head of garlic.

    Yes I use EVOO when grilled.  If I'm baking chicken I use a couple dabs of butter.

  • Olive oil, lemon juice, and lemon pepper seasoning.  I just put them in a ziploc and drop the chicken in there for an hour or so.  Delicious on grilled chicken.

    I also add to the bag some chopped onion and olive oil and fresh pepper.  You can also add some grated ginger if you want to do a citrus ginger number.
