Lunch is a hard time of day for me because I never know what to make. When DH gets home from deployment in a few weeks we're going to eat healthier and change our lifestyle so I need lunch ideas.
Well, it depends on your tastes, but some of my favorites are-
Salad with grilled chicken, cucumber, tomato, feta (pasteurized of course) and balsamic vinegar mixed with olive oil for dressing. It's very bold and doesn't taste healthy.
Grilled chicken breast with stir-fryed asparagus and spinach leaves (I use olive oil.)
Grilled chicken with quinoa and frozen veggie mix (kroger has a stir fry veggie mix that's really good). Sometimes I go with tofu instead of chicken. And adding fresh bean sprouts adds a little crunch- I love them!
I usually have a baked sweet potato with cinnamon as a side. It's healthy and tastes like a treat.
I like making a big pot of soup at the start of the week... then you have it for lunch or dinner, ready to go... and since you are making it, you can control the sodium, fat and calories... I like to make a big pot with lots of veggies, some whole wheat noodles and chicken broth. It makes eating healthy easy and delicious, and soup is always really filling....

My favorite lunch right now is a big bowl of veggie soup (I like the Weight Watchers Zero Points soup), an english muffin with avocado/salt/oregano, a piece of fruit and a small container of yogurt.
I'm nursing right now so I definitely eat it in stages but it keeps me full.
My favorite lunch is a huge green salad with snap peas, cut up baked chicken, lite ranch with sunflower seeds and sometimes an avacado on the side. Perfect!

A sandwich wrap. if you get the flavored tortillas (tomato, spinach) or a wheat tortilla. add grilled chicken or deli fresh meat, your choice of veggies, cheese. dressing of your choice. yummy!!
I like to make Hummus for the week and eat it with tons of veggies. You can play with the ingridents in the hummus.
For dinner just now I diced up cherry tomatoes and sauteed them (dry) just to heat them a little added fresh basil tossed in a bowl with a bit of balsalmic and a touch of parm cheese. I thought it would make a great lunch.
My latest fave lunch is a tuna melt on a whole wheat english muffin. I make the tuna with grey poupon and plain yogurt (so no fatty mayo). Add a peice of fruit (pear or apple or plum) and that keeps me full and satisfied for a long time!
