Josh sent an email out to everyone yesterday that was at our shower and thanked them all for coming, etc etc. Should I also write a thank you note and just have him post in the break room? Or is his email enough?
DH's office had a group shower for us and a co-workers wife who was also due at the same time. We had just planned on doing a card to everyone involved but the very next day his co-worker brought in notes to every single person involved so DH said we needed to do the same! That was a lot of writing!
When my office did a shower for me I just wrote one note that I posted in the break room so that everyone could see it.
I did an individual note to each person that contributed to our gift/gave us a separate gift, but the girls that put the shower together gave me a list of who contributed so I knew who to address them to.
I was also working and not able to attend the shower, so I felt obligated to thank each person individually. In your situation I would probably get a nice thank you card and address it to the office along with a fruit bouquet or something similar.

I sent a thank you note to my team, addressed to my boss, so that he could pass it around to everyone.
If he knows who sort of organized it all, I'd address the envelope to that persons attention and he/she could distribute it/post it.
Ditto and I brought in doughnuts/ kolaches for them as a thanks.
This is what Im doing... eventually once I finish the other TY letters. And maybe if they are lucky they will get cookies or kolaches.
