"Good" Chololate Cake??

So, a co-worker made an amazing chocolate cake for a picnic we had.  It was SO fluffy, but still rich...like nothing I have had before! She said it was a box mix, but that she added a good-size zucchini (cleaned and shredded up fine) to the batter before baking!  

DH is the "sweets coinsure" and was VERY hesitant to make the cake last night, per my request.  Well, he did (with homemade butter cream frosting I might add) and it came out SO well! Even he loved it!

In short...I can count the zucchini in the chocolate cake as a serving of veggies, right? :-)

  • I usually take a box cake, mix it per the direction and add 1 block of cream cheese and 1 same flavored instant Jello pudding. The result? OMG, the most moist, soft and best tasting cake ever!! Usually everyone ask for the recipe and cant believe it's a box cake with two additional ingredients.

    So the creamcheese counts as a serving of dairy then, right? :-)

  • I don't think you can count it as a full serving of veggies if it's one zucchini per cake, but it's better than nothing. 

    My mom also liked to trade out some of the oil for equal parts apple sauce.
