Cooking Related: Rookie pizza mistakes!!

I decided I wanted homemade pizza tonight, and I knew I wanted fresh mozzarella and tomatoes and basil.  And I love love love pizza sauce, it's my favorite topping, so I used 2 of the Boboli packages instead of 1.  Big mistake.

So, it turned out to be a mushy, slippery, messy mudslide of a pizza because the tomatoes just gushed liquid that sat on the top and there was so much sauce that everything just slid off.  The cheese was ridiculously good though!  I did put some EVOO on top as well as cracked pepper and sea salt.

Any suggestions for "dry" tomatoes?  Obviously I won't use as much sauce next time. Embarrassed

  • You should try sun dried tomatoes next time.  The fresh mozzarella definitely makes a difference though!  Try putting it under the broiler for the last 5 minutes and the cheese gets golden brown.

    Unfortunately I'm not a fan of sundried :(  I will try the broiler next time, though!  I was impatient for it to come out and didn't think of that, thanks for the tip!

  • I would think you could squeeze out the wet seedy part - I used to do it because I didn't like it, but I have also used recipes that called for it to be done.  You cut it in half, put your finger in the middle of the half and then squeeze the rest of the tomato around it with your other hand.  (Does that make sense??)  That takes away a lot of the moisture.

    Yes, that makes sense - I will have to try that!!

  • I too love the fresh tomato flavor, but found the fresh ones were too liquid.  I buy the diced ones from Whole Foods that are in a carton, pour them through a strainer to get rid of the majority of the juice, and use what's left on the pizza.  The only ingredient is tomato, so it's really fresh tasting and healthy!

  • I seed them, chop them and lightly salt them.  Then I lay them out on a cooling rack over a cookie sheet.  The salt draws a lot of the moisture out.  Also, partially baking the crust before topping helps keep it from being soggy.

  • De-gut and de-seed the tomatoes before. Then, put the liquidy veggies (pepper, tomatoes, pinnapple, mushrooms, onions, olives) in the oven for about 10-15 minutes (by themselves on a cookie sheet with a bit of EVOO). This will cook and "dry" them out before you put them on your pizza.
