Can you pickle any cucumber?

Or only smaller "pickling" cucumbers?

Sorry - dumb question. 

My cucumbers are no where near ready and I just got a whole mess of cucs from a friends grandmother but they're big ol regular cucumbers. Could I make spears instead of chips or is there something about larger cucumbers that makes them not appropriate for pickling.

  • I've only done one batch of pickles so far so I'm no expert by far.  However, from the research I did you can use any kind of cucumber to pickle.  Just different cucumbers are appropriate for different pickles like small cucumbers for gerkins, etc.

    We had some long cucumbers that we sliced for something like a bread and butter pickles.  I think we could have also made them into spears though and considered adjusted our cooking time when the needed to simmer in vinegar before being placed in the jars.  My plan is to try this next.

    I would just look at some different recipes and compare.
