We get a weekly produce box from a local CSA. Lately, it's a ton of squash. When it was yellow squash, I'd grill or sautee it, and it was ok. We're just not big squash fans. Maybe I just don't know how to prepare it. We have an acorn squash and 2 butternut squash right now.
Any recipe ideas that aren't super, well, squashy?
Or ways I can sneak it into DD's food? (she doesn't like it plan/steamed/grilled)... TIA!

Bake with brown sugar
Butternut squash is amazing when you cut it in half (leaving the skin on), scoop out the seeds, lay it cut side up in a 13 x 9 baking pan with a little water in the bottom (maybe halfway up the side of the squash). Then put a tablespoon of butter and a tablespoon of brown sugar in each hole where the seeds were. Season with a little sea salt.
Bake/roast on 350 until brown/soft and mushy. Scoop out the entire insides (including butter/brown sugar) and stir into a yummy mash. If you want to get really fancy, you can put some pumpkin pie spice in the mash, as well (cinnamon, nutmeg, clove, etc).
Super yummy and one of the best baby purees I've found. DS loved it when he was learning solids!
I know this recipe is for zucchini, but yu can use the basic recipe, and substitute the squash for the zucchini.
