OH! Or chicken pot pie! Normally I make the filling and freeze it in a jar, then make a few pie crusts and freeze those seperately...that way I can used them for other stuff if I want to.
lasagna and chili always freeze well. You could also make a butt-ton of soup.

The only thing I really ever freeze and bake is lasagna.
I can tell you what I put in it but usually I just eyeball the ingredients. Make the shells according to the package and then this is what I stuff them with. Then cover with sauce and more mozzarella and bake at 350 for about 30 minutes or until the cheese is melted and browning.
Ricotta Large Container (part skim) 2 Eggs Parsley Salt Pepper Garlic Onion Mozzarella 1 C Parmesan 1/2 c Frozen Chopped Spinach (drained)

I just wing it. For the filling I just mix together a container of ricotta cheese, some grated parmesan, some shredded mozzarella, cooked spinach, and an egg (to help it hold together I guess...)
Sauce is mostly garlic and onions with some sweet peppers mixed with some oregano and tomato sauce. You can put sausage or ground meat or anything in the sauce...I'm a recovering vegetarian so I don't put meat in mine, mostly out of habit now. =D
Once the shells are stuffed I cover it them with the sauce and bake at 375 for however long it takes for it all to be bubbling. Oh, usually I top it with a little extra mozzarella and parmesan cheese before baking.
Chicken enchiladas and baked ziti are our favs. I found some great freezer meals on www.momsbudget.com The spaghetti sauce and Chinese spare "ribs" are awesome.

I make a chicken and rice casserole that freezes really well. It's a whole cooked chicken, rice, cream of mushroom, jack and cheddar cheese, canned green chile and salt & pepper to taste. YUM.

I'm already doing stuffed shells and my favorite crustless smoked turkey and spinach quiche!
