What's your best "fresh from the garden" dish?

Yup. It's me. Again. Desperately trolling for food ideas so I can pretend I'm a sexy Julia Child.

I'm going to an outdoor party with instructions to bring my favorite "fresh from the garden" dish. Dessert and drinks will be provided so those options are out.

Bonus points for vegetarian, fru-fru, non-grill, female-oriented items.

  • caprese salad or some variation (sometimes I use cherry tomatos, chopped up mozz cheese and basil and mix it up or will sub the mozz cheese for feta).  yumyumyum!

    I also make a yummy salad out of mixed greens, roasted (or pickled) beets, and my homemade goat cheese. Yum!

    But honestly I do a freakin awesome Eggplant lasagna

    The breaded eggplants replace the lasagna noodles and you use fresh spinach and mushrooms.... lemme know if you want the recipe.... it's  healthy and vegetarian annnnnnnnd tastes better when you cook it and let it sit and reheat

     

    or a spinach salad with strawberries and a homemade strawberry vinegrette

  • Summer squash casserole.  Always a hit!  Uses some non garden things...cream of mushroom soup, cheese, sour cream, and crackers.  Let me know if you want the recipe.

  • Herb and lemon zest goat cheese balls (ha, balls, tee hee) on toasted ciabatta. Super refreshing, and since I imagine there will be a lot of veggie dishes there, this is fresh from the Herb Garden.

    Caprese Skwewer: basil leaf, cherry tomato, bocconcini (those small balls of fresh mozz. you can get in a tub) on a skewer - no cooking.

  • Corn, Avacado & Tomato Salad

    Best summer salad ever, especially if you love cilantro. It's always a hit when I serve it.

    It's not Julia Child, though. You might have to channel Paula Deen instead.

  • I did a zucchini tomato salad over the weekend that was really good. I julienned a large zucchini (you could slice it or dice it if you'd prefer) and tossed with a diced tomato, fresh basil, a little salt and pepper. Topped it with a white wine vinaigrette. Yum! (even from a non-salad eater like me:)

  • I made a fantastic risotto with asparagus, mushroom and onion from our CSA.  Might be too much for an outdoor party but let me know if you want.

  • I am OBSESSED with gazpacho right now.I use Ina Garten's recipe except I eliminate the oil, and add a pinch of worsterchire and horseradish. I also use a regular cucumber, seeded. And sometimes I use green pepper instead of red, whatever is on hand.

  • I also love tomato cucumber salad.  chop/slice up tomato, cucumber and onion, sprinkle with salt and pepper to taste and either mix with sour cream (it makes it taste so fresh and cool) or olive oil.  It's good with EVOO and balsamic too (and feta cheese).

  • Definitely capreses salad.  I also like a heirloom tomato salad, veggie skewers, roasted veggies, fresh corn salsa.

  • Yep. Caprese salad. Here's a fun "I am Julia Child reincarnate" idea:

    dice tomatoes, mozarella and basil. Make it more heavy on the cheese and basil. Add salt and pepper. Reduce balsamic vinegar over the stove, until it thickly coats a spoon...like cough syrup consistency (stir constantly...that stuff burns easily!) Mix it all together in a big mixing bowl. You'll see why I told you to go easy on the amount of tomatoes in the mixture below:

    If you're looking for appitizer samples, use roma tomatoes. For meal portions, use beefsteak tomatoes for this next step:

    Take "firm" tomatoes, cut them in half lengthwise, and scoop out the innards. Scoop the caprese salad misture into the tomatoes. Garnish with a whole leaf of basil, and a dollop of the balsamic.

    Would LOVE the recipe... even if I don't make it for the party this sounds delish!

    Unfortunately I can't do the capre. salad... I did that last time. So I need something different. If I can find good avacados the corn/cilantro salad sounds good, too.

    I omitted the sour cream and instead of doing the cups, I folded the wonton wrappers in half (wetting the edge of one side so they'd stick) and made little pockets. They looked kind of like pizza rolls:)

    It is so good on a hot day, especially if you add walnuts to it.  Also use olive oil not sunflower oil. 

    1. Mash the garlic with salt and then add to it grated or finely chopped cucumber.
    2. Add these to a large bowl and pour in the yoghurt.
    3. Gradualy add water - the thickness is down to taste and also depends on how flavourful the yogurt you are using is.
    4. Add additional salt to taste.
    5. Add finely chopped walnuts and fresh dill as well as a couple of tea spoons of oil (sunflower or olive oil is typically used).
    6. Best if refrigerated at least two hours before serving to allow flavors to mix.
    7. Serve chilled.

  • My all time favorite is simply garden fresh tomatoes, peeled, sliced and lightly salted.  That and an ear of corn is dinner often in the summer for me.  Another, simple yet yummy, favorite is sliced pickling cucumbers, and thinly sliced onions salted and dressed with water, vinegar and sugar.  You can add dill if you want, but it is not necessary.  The water/vinegar/sugar is totally to taste.  Maybe 1 cup water, 1/4 cup vinegar and 2T sugar as a starting point?  Too sweet...add more vinegar.  Too acid...add more water and/or sugar.  The dressing should totally cover the cucumbers and onions and it needs to sit a few hours or overnight.
