You can go with more than 3 if you have them blended/complementary/etc. I've seen fairly open floor plans with several earth tones that looked fabulous.
We aren't TERRIBLY open, but we have a small condo. Our living room is a khaki/green with a lighter accent color on the fireplace wall...our dining room is a relatively bright blue, though we're planning to go with an earth-toned orange or a dustier blue that will blend better. Annnd, our kitchen is green and white. I don't like the kitchen at all, so we're planning to redo it sometime after baby. The colors don't work at all with anything else we have...but I don't feel like we MUST use one of the colors from the living room or dining room. We'll probably pull in those colors, though, and have some pieces in all three rooms that tie the colors together. We took pics into our local Benjamin Moore and got some really good suggestions on pulling the rooms together without NEEDING to have the same colors/decor in all of them.
I think the lighting and windows in the area make a huge difference, too....
