Do you do it whole? Chop it up first? Cram as much into the ice cube tray as possible?
Usually my basil gets all eaten up and destroyed every year so this year I planted a bunch hoping for strength in numbers and all . . . well I got it! Now I have a bumper crop out there that desperately needs to be trimmed down!
Re: On freezing Basil in ice cubes
I chop it up first, it fits better in the ice cube tray that way. But think about what you're going to use it for too - then work with that.
Frequently I would make pesto and leave out the cheese because really anything I was going to add basil too could take some parsley and garlic as well
And sometimes I would cover the chopped basil with chicken broth instead of water - just another way to add flavor when I tossed the basil cube in with something.
