I make muffins using the one on allrecipes.com called "banana muffins II" and it's really good. I always put in chocolate chips. You can leave out the eggs and just put an extra banana in, so that helps with the fat/cholesterol of it. Oh, and a little tip...I put all of my too-ripe bananas in the freezer in a bag and then just pull them out and defrost as needed. So if you really don't feel like making bread today, you can save them for another day They turn dark brown, but the great thing is that they squeeze out of the peel and are really mushy when they defrost, so you don't have to actually mash them, just mix them into your recipes!
This recipe is great! I just add some cinnamon and sometimes a pinch of nutmeg and am really generous when measuring the mashed bananas. I usually add chopped walnuts too.
Here's my favorite. We just made it yesterday. I made muffins since my loaf pans are already packed apparently. I do alter this recipe a bit. I use 1/2 cup of white sugar and 1/2 cup brown sugar. I also added a teaspoon of vanilla and a teaspoon of cinnamon.
I like this one the best....I tweaked it a bit. half brown sugar & half white sugar, use all butter, 2 eggs, buttermilk instead of regular milk & 1 1/2 teaspoon of cinnamon. I also prefer baking it in mini loaf pans rather than the full size.
