Need help w/ cooking dry beans

I think I might be missing something.  But I can't seem to find the answer anywhere!  I started buying dry beans instead of the canned because it's cheaper and I can control the preservatives.  I did red kidney beans the other day.  I flash-boiled them and let them soak as directed but they were still pretty firm.  I thought they might soften as I put them into other recipes but no such luck :(

No I have black beans that I need to use this week.  Any tips on making sure they're the right consistency?  Thank you!

  • You still need to cook them in water before you can add them to recipes.

  • I think the long-soak method works the best. I don't like the quick-soak method.

    The other thing you might try is cooking them in a crockpot after you've soaked overnight. I like bean dishes better when they're from a crockpot, and it works really well for recipes like soups.

    Ah.  Kind of a PITA huh?  What is the point of soaking if you're just going to simmer?

  • long soak- i always put them in a big bowl of water in the fridge overnight.

    and then cook them for a long time.

  • I know the soaking part helps take some of the gassiness out of beans.  If for no other reason than that I soak them lol.  No one needs a gassy dh.

    They probably don't absorb water correctly if you go straight to boiling them and no soaking.

  • I soak them overnight (just cover in water), then put them with new water in the crock pot on high for a few hours (again, covered in water). That way I don't feel like I'm walking away from the stove being on and they won't accidentally boil over and cover my stove-top in nasty bean juice. Yuck.
