I've stayed in all three places in a range of accommodations.
In Naples, we were guests of my MIL at the Ritz. It was beautiful and definitely family friendly. They had activities for the kids, like movie night by the pool.
In Sanibel, we spent a weekend at my godmother's house. I'd say the best thing to do there is probably rent a private beach house or condo.
In Ft Myers, we stayed at the Mango Street Inn. It was an adorable bed and breakfast - very affordable and very close to the beach. However, no pool and not walking distance to most restaurants. Although, the little restaurant next door served delicious food.
If I had to choose from all three, I'd go back to Naples. I feel there's the most to do there for kids and adults. IDK if I could stay at the Ritz again, though,

Its an awesome small little place right on the beach. AND it has a super popular restaurant on site called........ wait for it.... The Turtle Club!! LOL! Of course I fell in love but it really is a great place and not that expensive considering its on the beach.

In Naples, I love the Naples Grande, very luxurious hotel, but not very expensive. The pool is very kid friendly (slide and beach entrance).
In Ft Myers, I've heard great things about the Pink Shell... never stayed their personally though.
