About 2 weeks after S was born I made a meatloaf recipe from Jamie Oliver's website. It had this tomato-garbanzo bean sauce that went with it that we decided it didn't really need.
WELL, I'm making it again tonight. Re-reading the recipe I discover that I was supposed to put the tomato-garbanzo bean sauce in the pan WITH the meatloaf (I had just served it on the side), THEN covered it with bacon slices & sprinkled it with chopped fresh rosemary.
So glad I didn't realize this last time because, as it turns out, rosemary fried in bacon fat (which is what ended up happening in the pan the way I did it) is a DELICIOUS accompaniment to meatloaf... or eaten with a spoon.
