Give me your quick dinner recipes

I have zero energy when I get home from work anymore, and I'm usually starving/nauseous.  We've been caving in to fast food but I do not want to live on burgers and fried chicken for the next 6 weeks.

Any good ideas?

  • make a big pot of soup on the weekend and eat it for a couple days

    since its getting warmer, salads with tuna or grilled chix, or even beans are good.

  • Chicken shake & bake! Pretty healthy and only takes 20 min.  Best part is your not supposed to handle raw meet so make him do it :)

    or pre-cooked chicken, cut it throw it in a salad and poof! Instant dinner!

  • Cold cereal.  Currently on a Cracklin' Oat Bran kick.  Looks like dog food, but is so tasty.  I also keep hard boiled eggs in the fridge. 

    I also do the cook on Sunday and eat leftovers all week.  Last weekend I made a huge lasagna.  Just finished it today.

    I give up trying to get a ticker.  I have a DD that is 2.5 years old and is awesome.  Maybe I'll add a quote to distinguish myself.  Hmmm.  How about...

    Hmmm.  I wonder if I can convince DH this is true.  Something tells me I can't.

  • One of my good friends gave me this recipe last month- and we love it!  It turns out great every time and it's super easy. 

    Easy Carnitas Fajitas

    1.  Place pork loin in slow cooker.

    2.  Pour fresh salsa (the kind from the refrigerated section) over the top.

    3.  Cover and cook on low for 6-8 hours.

    That's it!  It turns out so good!  When it's done just empty out grease/weird pork juices and then use a fork to break up the pork into shredded pieces.  Buy tortillas and faijta toppings (tomatos, cheese, avocado, pinto beans, etc).  So good and so easy!

  • For the quickest meals we buy all-in-one bag style meals.  Only neither of us usually like them so we are always searching for a high quality all-in-one.  Tonight we had Bertolli chicken alfredo and fettuccine and enjoyed it.  Bertolli frozen bags get thumbs up from the two of us!

    We love the Bertolli frozen bags too! I'm not usually a frozen bag meal type of person, but we love these.

  • My go to quick dinner is an asian stir fry chicken and veggie dish with noodles or brown rice. I stock up on chicken breast tenders and portion them out with teriyaki sauce and seal that up with my food saver and freeze. Then when I get home from work throw the chicken package in the sink with cold water and start your rice or noodles (I love soba or udon). When the chicken is thawed (~15 min) saute it in a nonstick pan with the sauce and add some veggies (broccoli, sugar snap peas, bell peppers, carrots, celery...options are endless). You may want to saute the veggies first and then add them back in when the chicken is cooked. Then serve over the rice or noodles. Healthy and can be done in under 30 min especially if you buy the bags of precut stir fry veggies.
