I am still only giving solids once a day. I either give a plain veggie or fruit, or mix it with cereal. I just gave her oatmeal today for the first time. I mixed in some bananas, and she loved it. I am going to ask the pedi next week about how many meals though and if she should eat cereal every day.

E's been eating cereal since about 4.5 months, and we've been doing lunch for a while with 1 jar of veggies, but today we started breakfast, so i'm trying to decide whether or not to do cereal then as well, or if it's just better to give 2 jars of fruit.
we've been given the all-clear for stage 2 & meats, so i'm thinking that may replace cereal at dinner, but i don't know.

This exactly. When we do start 2x/day, we'll probably do cereal with fruit in the morning and a veggie for dinner.
