  • We only have a few weeks until we move so, I am trying to use up everything we have. Plus, I haven't really felt like cooking. ;-)

    Soup & Grilled cheese

    something with chicken breasts

    something with smoked sausage

    Thurs: Leftovers

    Fri: Homemade Pizza (HEB crusts rock)

    Saturday:  BBQ brisket

    I was about to ask you about the HEB pizza crust.  Is it frozen, in a can?  

     

    I do not really have a recipe, they were serving it at the cooking station at HEB one day I just recreated it.  Basically take boneless, skinless chicken breasts pound them out a bit.  Then coat them in pesto (I buy the jarred stuff usually do not remember the brand though) then a layer of Italian bread crumbs (I usually mix some parm cheese in with the bread crumbs as well).  The ones at HEB were pan fried in olive oil which is what I did the first few times I made it but last time I tried baking it and it was still really good!  I think I baked on 350 for about 20-30 minutes.  Oh and I put them on a cookie cooling rack last time and then that on a cookie sheet.  It helped the bottom of the chicken get crispier.

    The crusts are already made...you can get them in the deli area or in the pasta aisle.  They're 2 to a package (with sauce) for around $5.  We freeze the second until we're ready to use it.

    It's just DH and I so we just cook a few times a week and have plenty of leftovers, or do frozen pizza w/salad or take out. 

  • I plan on making Fly's good for you hamburger helper this week.  That looks yummy!
  • i'll be in austin tonight - wednesday and DH is gone wed when i get back so we only have a couple meals:
