Success after IF

NBR: anyone ever made cake balls?

If you have, do you have any tips for dipping the cake?  I'm making a big a$$ mess and they do not look pretty.  At. All.  Which is fine but I'm thinking there has to be a better way.  I used toothpicks.  Any help?

  • Freeze them before you dip them! They don't need to be frozen solid but firm enough that they won't fall apart when you dip them

    I was going to say the same thing. Also it is easier to pull them out of the melted bark with one of those egg separater things if you have one.
  • Ok, so they are frozen.  Is it possible my bark isn't melted enough? I melted until it's smooth, no lumps, hot...   I have no idea how liquid-y it's supposed to be but I drop a cake ball in there (or ease it in with a toothpick) and it's like sludge.  Is it supposed to run off the spoon?  I have an egg separator but I can't imagine it even "running" through one...

    Sounds like your bark isn't thin enough. Maybe add a small amout of oil to it and heat it up a bit more.
  • I have made them several times and had this same thing happen at Christmas time.  I checked the date on my coating and althought it melted fine, it was right at the time of expiration.  I wouldn't have even checked the date (it was only in the cabinet a couple months), but one of my friends said being older chocolate caused this to happen to her.  I got a new batch of coating and it worked great again!

  • Thanks for the tips ladies!  I'll check the expiration date and/or add oil to the next batch of coating.   They taste great but at this rate if I keep eating "just the ugly ones dear" we'll have none left and I'll gain 10 pounds this week!

  • if you find something that works, let us know.  i've made them before, used frozen balls added oil to my choc, and i still couldn't get that nice smooth finish like Bakerella's.  oh well, they looked ok after i decorated them and tasted great!

  • I have not done this in the "ball" way, but made them look like little cupcakes.  Same concept, just the bottom part of chocolate looks like the bottom of a cupcake.

    Add some shortening to the chocolate.  I think it works better than oil.
