grilled cheese- what kind of cheese?

I'm going to try to make a grilled cheese sandwhich for LO, but I'm worried it might be too tough to bite through.

What kind of cheese does your LO like and how well do you cook it? Lightly toasted, or like a regular grilled cheese? I can't wait to share these with him... and by "share" I mean eat almost the whole thing.

I use gouda, cheddar is almost impossible to find over here!

I used american, mostly because thats how I make mine. She also lovessss american cheese.

this. Sometimes Mozzarella if I have it fresh.

We gave her turkey burger last night- on which I put American cheese. I was pretty please with how soft it stayed after it cooled down. I haven't made DD a grilled cheese yet but I would feel comfortable using it. GL
