Anyone have a recipe for a tasty, healthy, easy version? My DDs supposedly love it at daycare and thinking it was somewhat of a fluke, tried the Stouffer's red box stuff for lunch and they were big fans. Since it seems to be a winner, guess I should throw it into the rotation, but trying to do it a little healthier than the Stouffer's version (not that it isn't darn tasty!). TIA!

My cousin does an easy version of tuna casserole. I have made it a couple of times because it seems that Nkosi and Kya love it. Anyway, I did wide egg noodles with four cheese alfredo sauce and a cream of mushroom soup. Yes, I used cream of mushroom soup in cooking it! Saute tuna and onions (I have added other veggies like corn or peas too) and season to your liking. I do garlic. Anyway, add the sauces and simmer. Mix this tuna mixture with noodles in casserole dish and sprinkle with Monteray Jack cheese and place in oven until cheese is melted and browned.
I guess you could sub whole wheat noodles and add a low fat alfredo sauce. Use a bit more veggies and a low fat cheese?

this version was in last month's Bon Appetit and i thought it looked good. you could always add some peas and/or mushrooms to the mix too.
