I've seen a few of you mention that when you have salad for dinner, you feed your kids something else. So I thought I'd share what I do, since we eat salad pretty frequently, especially in the spring and summer.
As an example, tonight we had southwestern grilled chicken salads. They had mixed greens, grilled chicken, black beans, corn, avocado, cherry tomatoes, a little cheddar, and a few crushed up tortilla chips. I just gave Caroline everything but the lettuce and called it dinner. Of course, those are pretty much all her favorite veggies, but that's usually what I do anytime. Whether its a greek salad, italian antipasta, roasted veg salad, or just a basic salad w/your standard veggies. I don't give her dressing to dip it in (though sometimes I do give her hummus or tzazicki, but I know a lot of kids like dipping, so that would be a good option too.
Anyway, I don't know if this will help anyone w/meal planning and kids, but I thought I'd share.

haha that is hilarious! Caroline loves grape tomatoes too. I actually haven't ever given her lettuce, but she picked up a piece of parsley I dropped last night and ate it, so maybe I should try, haha
