Since getting the "beetus", DH has been experimenting with lots of low carb substitutes. One of our favorites has been cauliflower. He's made mashed cauliflower and cauliflower au gratin (both easy and yummy). Last night, I made a tilapia dish that I usually put over rice. Instead, I found a recipe where you put raw cauliflower in the food processor and use the "shred" option. Then put some salt and pepper (and a little butter) on it and pop it in the microwave for 2 minutes.
It was really good, DH even went back for seconds! Just thought I'd share. Anyone found any other quick and yummy substitutes?!

Quinoa is a great rice substitute because it is high in protein. The body processes it better than rice. It is so easy to cook...takes only about 20 minutes and has a wonderful flavor. I always cook it with chicken or veggie stock/broth instead of water for more flavor.
