How do you cook Tilapia?

The only fish I've ever cooked is Perch and we usually bread it and deep-fry.  How do you know the fish is done?  We are trying to broaden our horizons and start eating more fish. 

Any recipes would be greatly appreciated.

    Ingredients

    • 2 pounds asparagus, tough ends trimmed, cut into 1-inch pieces
    • 2 tablespoons chili powder
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon saltimage, divided
    • 1 pound tilapia, Pacific sole or other firm white fish fillets
    • 2 tablespoons extra-virgin olive oilimage
    • 3 tablespoons lemon juiceimage

    Directions

    Bring 1 inch of water to a boil in a large saucepan. Put asparagus in a steamer basket, place in the pan, cover and steam until tender-crisp, about 4 minutes. Transfer to a large plate, spreading out to cool.

    Combine chili powder, garlic powder and 1/4 teaspoon salt on a plate. Dredge fillets in the spice mixture to coat. Heat oil in a large nonstick skillet over medium-high heat. Add the fish and cook until just opaque in the center, gently turning halfway, 5 to 7 minutes total. Divide among 4 plates. Immediately add lemon juice, the remaining 1/4 teaspoon salt and asparagus to the pan and cook, stirring constantly, until the asparagus is coated and heated through, about 2 minutes. Serve the asparagus with the fish.

    This is a chart that tells you cooking temps and appearance for meat and fish. If you buy a meat thermometer (about $5-50, depending on how nice and where you buy it), just stick it in the center of your protein and you will know exactly how done it is. For example, if you want a steak medium rare it will be between 130 and 135 degrees F. Fish should be cooked to 140.

    ETA: It doesn't matter how you cook it, the internal temp should be the same.

    You can pan fry it in butter, cook in the oven, etc. Just don't overcook it; once it hits 150 it is way overdone.

    That seems like a long time... Is your oven calibrated right? (Is the internal temp the temp the controls say it should be?)

    We've always cooked it that long and it's never dry or over cooked.

  • I sprinkle both sides with taco seasoning and cook in a fry pan sprayed with Pam. Then I top with Peach mango salsa. It is delish!
  • I usually bake tilapia one of two ways. 

    1.  Sprinkle with vegetable seasoning and bake

    2.  Dredge in italian breadcrumbs and parmesan cheese and bake

    Both are delicious!

  • I bake mine in a glass dish at 350 for 25 minutes or until opaque throughout.  I responded to a post above with a recipe, but I'll repeat here.

    Pour juice of 1 lemon over fish.  Season with bread crumbs, Old Bay seasoning, parsley, salt and pepper.  Voila!

    When in doubt or looking for something new, I scour recipes on foodnetwork.com or williams-sonoma.com.

  • I cover the tilapia in Emeril's Bayou Blast seasoning or Goya Adobo seasoning and broil it about 10 minutes on each side.
