I am not a very good cook. But I try and I am starting to make a list of what to make each week for the whole week.. I just get sick of Spaghetti and pasta dishes..
You can use minute rice or regular. If you use regular, start it cooking after you brown the meat. Minute, start it cooking when you toss the meat in with the veggies.
Brown meat, remove from pan, toss in veggies (I like lots of broccoli, celery, carrots, onions, green peppers and some water cashews), stir fry. Once they are near where you want them cooked, toss the meat back in. Stir in some stir fry sauce (however much you want to taste - you can just buy it at the store). Delicious!
Oh, another one - this is cheating a little, but so easy and soooo delicious.
Buy one of the McCormick stew mix packets, and follow the recipe on the back (brown meat with flour, add water/mix, cook, add veggies, cook). It takes awhile, but it's simple and delicious.
Cut a big slit in the side of a boneless/skinless chicken breast. On the inside, stuff a slice or 2 goat cheese and 1 or 2 leaves of basil. Rub the outside of the chicken with olive oil, and sprinkle generously with salt and pepper.
Bake on a cookie sheet at 375, turning once, until the meat is cooked through (depends on how thick your chicken is).

Crockpot BBQ Pulled Pork
1 pork roast or loin 1/2 bottle of root beer 1 onion, diced Salt & pepper 1/2 jar BBQ sauce
Place the pork tenderloin in a slow cooker, put any seasonings you want on, and onion over the top, then pour the root beer over the meat. Cover and cook on low until well cooked and the pork shreds easily, 6 to 8 hours Drain well. Stir in barbecue sauce. Cook on low another hour, if desired, to get flavors to soak in, or serve immediately over hamburger buns.
Cheesy Crockpot Spanish Chicken
1 1/2 pound uncooked boneless, skinless chicken breast 10 oz Campbell's Cheddar Cheese Soup 10 oz Campbell's 98% Fat-Free Cream Of Chicken Soup 12 tsp McCormick Taco dry seasoning mix
Place chicken breasts in the crockpot. Mix the undiluted soups together with the taco seasonings and pour over chicken. Cover and cook on low 6 to 8 hrs, until chicken is tender. Serve over rice or a baked potato (Tastes great with brown rice).
***if you don't want to use the cheddar cheese soup you can use 2 cans of cream of chicken-- it tastes exactly the same either way

A fast alternative for cabbage rolls.
Ingredients: 1 1/2 lbs. ground beef 2 medium onions 1 clove garlic, minced 1 tsp. salt 1/4 tsp.pepper 1 - 14 oz. can tomato sauce 1 can water 1/2 cup uncooked long grain rice 4 cups shredded cabbage sour cream
Instructions: Brown
beef, onions, garlic, salt, pepper, tomato sauce and water. Bring to a
boil, and stir in rice. Cover and simmer for 20 minutes. Place 1/2 of
the cabbage in a greased baking dish, cover with 1/2 the rice mixture,

sour cream. May be refrigerated before baking Serves 6
This is another really easy one that is great for company and freezes well (minus the cashew nuts...they go a bit soft so if I plan on freezing i leave them out and just add them at the table)

The Rest 2 Tbsp. cornstarch 1/2 tsp. sugar 1/4 tsp. salt 3 whole boneless, skinless chicken breasts, cut into cubes 1/4 cup oil 2-3 Tbsp. minced fresh ginger 1 Tbsp. minced garlic 1 small onion, thinly sliced 2 red peppers, cut in strips 2 carrots, thinly sliced on diagonal 2 cups snow peas 1 1/2 cups cashews sprinkling of sesame seeds, toasted
Instructions: Combine

and salt. Add chicken and toss. Heat wok or frying pan to highest heat.
Add oil. Heat to hot, not smoking. Add chicken, ginger, garlic and
onion. Stir until chicken is opaque (about 1 minute). Add peppers and
carrots. Stir 2-3 minutes. Add peas and sauce. Cook until sauce comes
to a boil. Add cashews and sprinkle with sesame seeds. Serve
immediately. Serves 6

i also like to throw a cheap cut of roast in the slow cooker with onion, carrots, and potatoes with about a 1/2 beef broth and cook on low 7-8 hrs or so. nice no fail recipe

This chicken is really good and it's a freezer recipe, so you can make as much as you like, individually wrap them, and then just cook what you'll eat. The initial prep is short, crazy easy on the day of, and it's really tasty. I usually make this with a starch and veggie (either potatoes/mac and cheese with broccoli/corn/carrots... you get the idea). It also works really good with a meatless spaghetti or alfredo, but you said you're sick of pasta.
6 boneless skinless chicken breasts 1 c shredded parmesan cheese 1 packet italian dressing seasoning (these come 3/box in the salad dressing aisle) garlic (couple cloves, chopped or some powder works) s&p oil
Mix the cheese, powdered seasoning, and garlic in a bowl. Put a few tablespoons of oil in another dish. trim chicken, dip in oil, then roll in mixture. Individually wrap the pieces in saran wrap, then put all of them in a freezer bag and throw in freezer. When you want to cook some, thaw in the fridge overnight or in your microwave. Then bake at 400* for 45 minutes or so.
My go-to meals are typically a grilled/baked meat, some steamed veggies and a starch.
I think anything you can stick in the oven is easy. So I'm a fan of homemade shake-n-bake (I'm not fan of the real stuff because it's soo salty to me. but you can get plain or flavored breadcrumbs and dump it in a bag and do your own). We do pork chops this way and chicken breast.
I also do roast beef once or twice a month. Whole, roasted chicken. London broil - in the broiler.
And for side dishes I usually do a quick-cook rice, noodles, potatoes (roasted, mashed or parboiled), stove top.
I made this the other night... it was so easy and delicious!
Pork Chops in Ginger Ale
Ingredients:
2 large onions, sliced
1/4 cup butter, divided
4 to 6 pork chops, about 1 inch thick
2 tablespoons brown sugar, firmly packed
1 tablespoon ketchup
1 tablespoon flour
1 cup ginger ale
salt and pepper, to taste
Preparation:
Melt half the butter in a skillet over medium heat; add onions and saute until lightly browned. Remove onions to a 2-quart baking dish. In the same skillet, brown the pork chops in remaining butter. Place chops over onions in the baking dish. Sprinkle with brown sugar. Blend ketchup with flour to form a paste; add ginger ale and stir well. Pour ginger ale mixture over the pork chops; sprinkle with salt and pepper. Bake in a 350 degrees for about 1 hour or until chops are tender. Serves 4 to 5.
Whole chicken in a pot of boiling water with 1-2 carrots and 1-2 celery stalks for about an hour, take out the old veggies, cut up some carrots, onions, celery, potatoes and add for the last 20 minutes. Take out the chicken and shred and cook up some small pasta (ditalini). It makes a crapload and freezes well, so the easy part is having 3-4 more meals to freeze and thaw. you do have to make new pasta each time otherwise its soggy when thawed.

Do you have a crock pot? This recipe is really easy.
3 to 4 lb. corned beef roast, trimmed of fat
1 cup brown sugar
1 bottle Guinness
Rub the brown sugar on the corned beef. Place in the crock pot. Pour in the beer. Cook all day on low.
I serve it with a spicy mustard, frozen veggies, and rolls. Use leftovers for reuben sandwiches another night.

1 T. dijon mustard
Mix picante, sugar, and mustard. Pour over chicken. Bake @ 400 for 20-25 minutes. I serve it with rice.
