When I used to eat meat (and dairy) I would throw in some frozen chicken breasts with the bone in (start from frozen so that they have to thaw in there before they cook, that way they don't dry out), throw in some onion pieces, some potato chunks, baby carrots, celery pieces and a large can of cream of mushroom soup. Oh, I also stirred in a packet of french onion soup mix. That might actually make me eat chicken again..... Cook on low for 8ish hours.
Also, do you use the Reynolds slow cooker liner bags? If not, they are like $2.50 for 3 and so worth it.
Mexican Chicken - a pound of frozen chicken breasts (boneless), a can of corn not drained, a can of black beans not drained, a jar of salsa - cook on high for 4 hours or low for 6-8. Throw in a brick of cream cheese and let it melt and stir it in. Serve over rice or shred the chicken and serve in tortillas.
