I might attempt a faux corned beef. I did faux ham for Easter last year, I think...
I'm a fan of cabbage and parsley-ed potatoes smothered with vinegar, green beans, and Irish soda bread.
My mom also makes a dessert called "Irish Potatoes" which are basically powdered sugar, coconut, and milk made into a dough then rolled in cinnamon.
Mmmmmm....corned beef, Irish Soda bread, cabbage and boiled potatoes. My once a year meat indulgence. I can't wait for it to come!!
Sorry, I can't think of any alternative. The Irish don't have that big of a cookbook. ha ha
