I was making Pioneer Womans meatloaf and seriously have over a pound of extra meat mixture left because the loaf would have never fit in a pan (good to remember for next time). What can I do with the mix? Freeze it, use it in something else, I need ideas! For the record this mix has eggs, cayanne, breadcrumbs and veggies in it

You could freeze it. The first year DH and I were together, I made him mini meatloafs in my heart shaped cupcake pan for valentine's.

Make meatballs or mini meatloaves. I do that with turkey and freeze them for DS. They make for an easy dinner or lunch.
