Have you cooked beets?

I bought some fresh beets on a whim last week and have NO idea what to do with them. I've really only ever had nasty canned cooked in vinegar that my grandma used to make and I hate them, but thought maybe I should give them another try.

I've googled and just see instructions for roasting them but then what? Do you use the roasted beets in something? Eat them plain?

Do you have a favorite beet recipe?

My mom slices them and steams them - serves them with salt and pepper. Maybe a little butter on top. I love putting a little italian dressing on them.

I roast them and eat them plain. Or, you could boil them and put them in a cold salad with some goat cheese.

roasted beets are amazing! I also steam them and put a little salt, pepper, butter when they are done.

Dumb question, but do you need to peel them first before steaming? Or do you wait and peel them after cooking?

borsht (beet soup with cabbage, carrots, potatoes). can make it with beef/broth or vegetables only.

peel after cooking. The skin should just come right off. I use our veggie steamer and just steam them. I toss them w/ a little balsamic vinegar and brown sugar.
