  I'm using this site to make Aerin's cupcakes.  They do have a butter cream/vanilla recipe.

  I'm doing the lemon cupcakes with cream cheese icing (made these for Alec's first birthday too and they were a hit)

  Do you have a Kitchen Aid mixer?

  If so I have found a rockin' white/yellow cake recipe. I tried the white cake version and it was divine (same recipe just egg yolks instead of whites for the yellow version).

  It could be done with a hand beater but a mixer is best to fully aerate the batter and make the cake light.

  I'm about 90% certain that I am going to make Darren's bday cake myself (i know, call me crazy).  I know we have some fabulous bakers on this board and I was wondering if any of you would be kind enough to share a fool-proof yummy MOIST yellow/butter cake recipe.  Or else I can always use my Betty Crocker mix w/ a pudding pack.  TIA!
