I try to write things I would use it toward. Like "Thank you so much for the Babies R Us giftcard. We can't wait to use it toward decorating the baby's room." Or even, "It's really gonna come in handy with all the things we will need for the baby." Something like that.

My co-worker got me a Toys R Us gift card for example and I said :
I really appreciate the gift card. Myles and I are going to Toys R Us this weekend and Im going to let him help me pick out something for the baby with it. Im sure it will be fun! Thanks again.

It is really going to help us out as we purchase X for baby/we're looking forward to using it for X and Y for our little one's room/it's going to come in handy when the baby arrives and needs X, Y and Z. We really appreciate your kindness to us!"
